Santiago Santolalla graduated from the famous Institut Paul Bocuse in Paris. He then decided to apply his skills to develop gourmet plant-based meals. In February 2016, Santiago opened Seitan Urban Bistro, in the Miraflores districts of Lima, Peru.
The chef loves using Peruvian flavors and ingredients, which he deems underused in his own country: “Considering the great biodiversity of Peru, there are many untapped resources,” says Santiago, who became vegan progressively, relinquishing fish being the hardest for him.
Seitan serves lunch, dinner, drinks and take-out and is open Monday through Saturday from 12:30 to 3:30 pm and again from 7:30 to 10:30 pm.
